Honey Braggot Roasted Chicken
1 Whole Chicken
1 Tbsp Grainy or Dijon Mustard
1 Finely Chopped Shallot
4 Cloves Finely chopped Garlic
1/2 tsp red pepper flakes
6 Tbps Meadow Vista Honey
2/3 Bottle Pictish Beast Braggot
1 tsp Sea Salt & tsp fresh ground Pepper
1 tsp soy sauce
1 Tbsp Olive Oil
Combine 1 Tbsp Honey, 1 Clove chopped Garlic, 1 Tbsp Olive Oil with 1/2 tsp salt & 1/2 tsp pepper, Rub on chicken & place in a roasting pot. Set aside.
For Honey Braggot sauce, combine remainder of ingredients (set aside 2 Tbsp Honey for drizzle) in a small bowl & whisk together.
Pour sauce around chicken & bake at 400 degrees for 30 min with the lid on the pot. Remove Lid drizzle with 2 Tbsp Honey and cook for another 45 min. Total cooking time 75 min or until cooked through & juices run clear.
