Honey Braggot Roasted Chicken

Ingredients

  • 1 Whole Chicken

  • 1 Tbsp Grainy or Dijon Mustard

  • 1 Finely Chopped Shallot

  • 4 Cloves Finely chopped Garlic

  • 1/2 tsp red pepper flakes

  • 6 Tbps Meadow Vista Honey

  • 2/3 Bottle Pictish Beast Braggot

  • 1 tsp Sea Salt & tsp fresh ground Pepper

  • 1 tsp soy sauce

  • 1 Tbsp Olive Oil

Method

Combine 1 Tbsp Honey, 1 Clove chopped Garlic, 1 Tbsp Olive Oil with 1/2 tsp salt & 1/2 tsp pepper, Rub on chicken & place in a roasting pot. Set aside.

For Honey Braggot sauce, combine remainder of ingredients (set aside 2 Tbsp Honey for drizzle) in a small bowl & whisk together.

Pour sauce around chicken & bake at 400 degrees for 30 min with the lid on the pot. Remove Lid drizzle with 2 Tbsp Honey and cook for another 45 min. Total cooking time 75 min or until cooked through & juices run clear.
